1 Picadita - Literally a “little bite”, it refers to the aperitivo where you eat and drink a little before the meal.
2 Achuras: refers to the offal, the innards of an animal. The parts that sometimes get thrown away, but in Argentina are a popular part of the asado.
3 La entraña: not to be confused with “las entrañas” (which refers to the entrails), is a special cut of beef called the “skirt steak”.
4 Chinchulín: or “chinchus” are chitterlings or chitlings in English, a special part of the offal.
5 Matambrito: diminutive of matambre - meat, here pork, that is rolled and stuffed. English borrows the French “roulade” which means “roll”.
