Alright, here's the deal: Your buddies are coming over in 30 minutes expecting to eat, and you just got home from work. It's time to fire up the grill and make one the tastiest meals they've ever had. This... is the lightning round.

On the menu we have seared scallops and shrimps in a spicy jerk sauce served on grilled polenta. To go with the seafood, we have an arugula and fresh barbecued corn salad. Time to get cooking.

This is what you'll need:

- Shrimp
- Scallops
- Polenta
- Arugula
- Corn
- Radishes
- Jerk sauce
- Lemon juice
- Olive oil
- Salt and pepper

First off you want to soak the corn in a bowl of water for five minutes. This will cause the corn to steam when it's time to grill them. After that you want to cut your polenta into three-quarter-inch-thick slices and brush them with olive oil and season with salt and pepper. Put your corn on the grill and let it cook for five to seven minutes or until the husk is golden.

Rinse the scallops and shrimp with water and pat dry, the take the shell off the shrimp and toss the seafood with your jerk sauce. Let it marinate for five minutes to sear on the grill for about two and a half minutes per side. Grill your polenta to give it a light crust without burning or charring it.

Plate a handful of arugula and top with you sliced corn and some thinly sliced radishes, then dress the salad with some olive oil, lemon juice and salt and pepper to taste.

Place the scallops and shrimp on top of the grilled polenta then place the polenta around the salad. Time to eat!
