When we say that Eclairs are probably one of the best desserts out there, we're not messing around. These little pastries are sweet, and can be made with all kinds of flavour combinations. Here's the classic way to make them.
Here's what you'll need:
- Butter
- Flour
- Icing Sugar
- Salt
- Eggs
- Heavy Cream
- Vanilla Extract
- Semi-Sweet Chocolate
And here's how you make these delicious little buggers:
First up, preheat your oven to 425F, then in a saucepan, toss in 1/2 a cup of butter and 1 cup of water. Bring to a boil, then remove the mixture from the heat and add in 1/4 tsp salt, along with 1 cup of flour and 4 eggs. Place the dough in a chef's bag (plastic bag).
Squeeze the dough into 8 small cylinders on a backing sheet covered with parchment paper. Place in the oven for 15 minutes, then lower the heat to 320F, and bake for another 20 minutes.
Pour 1 cup of heavy cream in a bowl along with 1tsp vanilla extract and 1/4 cup of icing sugar. Whisk until fluffy. Place 2 tbsps of butter into a sauce pan at low heat along with the chocolate. Once the chocolate has melted, add 1 cup of icing sugar. Add hot water until desired icing texture is achieved.
Slice open the eclairs and fill with the whipped cream, then drizzle the chocolate over them. Serve and enjoy.
