There's nothing quite as comforting or delicious as a grilled cheese sandwich. But that doesn't mean it can't be improved. Add an injection of beer and bacon to the mix while keeping the cheese on the side with this unique take on a classic dish!
What you'll need:
Sandwich
-Thick Cut slab bacon fried
Beer Batter
-Sliced Sourdough bread
-2 eggs
-1 Cup Dark Brown Ale
-1/8 cup flour
-1/2 tsp salt
-1/4tsp chilli powder
-1/2 tsp garlic powder
Salsa verde
-oil
-S/P
-lemon juice
-bunch fresh bright herbs (basil/tarragon/parsley/green onion)
-1 tbsp dijon mustard
Beer Grilled Cheese
-1/2 sweet Onion (finely diced)
-2 cloves Garlic (finely chopped)
-S/P
-1 tsp maple syrup
-1 bottle dark ale
-1 cup All sorts of grated cheeses
-1 cup cream cheese
-2 tbsp butterbutter
-1 tbsp mustard
-1 tsp hot sauce
-1 tsp Worcestershire sauce
-1 tbsp cornstarch
Instructions
Grilled Cheese Beer Dip
1. add oil to med heat pan and add diced onions and garlic
2. lightly sweat
3. add 1/2 bottle beer and continue to cook down until beer is reduced to a jammy consistency
4. add maple syrup, butter, mustard, hot sauce, worsted sauce to add sheen and make jammy
5. lower heat and add cream cheese and grated cheese
6. mix cornstarch and beer separately until a consistent lump free slurry
7. once cheese is melted and cornstarch and beer until desired thickness is achieved
Beer Grilled Buddies
1. Fry bacon
2. make salsa verde
3. whisk together batter
4. dunk bread in batter (1 side only - leave 1 side dry(ish)
5. drain excess batter
6. place bread on tray batter side down - add bacon and salsa verde to inside (dry sides facing up)
7. construct sandwich, place in pan and fry on all sides until sealed together
8. take out of pan set aside.
Slice sandwich into 2x triangles, plate on board with a ramekin of beer cheese, then at the end add a squeeze of ketchup for the final touch.
